Yesterday was a day from down under… and I’m not talking about Australia. It was one of those days when you wake up and feel awful and it just keeps getting worse.

Ana whined and I cried…This was our pattern for the day

I cried because I wasn’t feeling good, because I felt like I didn’t have anyone close by me (which I don’t), because I have been sick and just wanted a break. I cried because my house was (and still is) a wreck, because I don’t know anyone here, because I just felt like crying… See the pattern here? I, I, I, I, I…. Whaa, Whaaa, Whaaa! I was feeling sorry for myself, and a little depressed too. {Don’t judge me, you know you’ve done it too.}

After a while I managed to pull out of it a little (thanks to a sweet friend and sister in Christ, whom I called on for prayer). Somewhere around 1:30 pm I finally gout out of my pj’s, took a shower, and even blow dried my hair! (No small undertaking).

When my hubby got home he gave me a big hug, which always makes me feel better! He even said he was going to take me out (or should I say us, since we don’t have anyone to watch Ana)!… YAY YAY YAY YAY!!! This meant I was actually getting out of the house! Despite all of this the bad energy was still flowing, but the evening kept getting better, as did my mood.

Joseph was going to take me out, and to make it even better we were going downtown! My favorite place to go! 🙂

My Town!

I love this place! It just feels like home!

Joseph wanted to try a new restaurant, one that I had already been to and raved about! THE LAZY GOAT!!!!!

On our little 10 minute drive downtown Ana fell into a deep sleep! (Her only nap of the day at 4:30, turned out to be the best baby-sitter we could have asked for!) She actually slept through most of our meal!

About the restaurant:

The Lazy Goat is an eclectic, tapas style restaurant, specializing in Mediterranean cuisine. It is fab! {lol}

This place is so much fun! As Ana’s slumber continued Joseph and I talked and laughed, and ATE!!! 🙂

As we sat and talked we couldn’t help but be taken in by this beautiful city that we now call home. We talked about why we love it here… the classy business people, the funky artistic edge, the outdoorsy-ness (yes it’s a word… now), how family friendly it is (note the family out for a stroll in the above picture). We love the character, and culture this city has to offer. Most of all we love that it’s perfect for us!

…back to the eating part!… We ordered a smorgasbord of yummy tapas!

This is the last of our delicious Fried Goat Cheese! These were warm, little pieces of heaven, deep-fried, dusted with ground pistachios and drizzled with honey!!!!

Here we have the rest of our meal!

 Mediterranean Pimento Cheese (it will blow your mind!), is made with feta cheese and served with warm bread; Even Lazier Paella (in the molcajete), is a dish of roasted chicken, house made chorizo sausage, “bomba” rice,and sofrito broth; and Toasted Garlic Shrimp which features blistered tomatoes, feta, ouzo and arugula tossed with the best tasting shrimp you will ever eat!

Ana did eventually wake up and she was in a much better mood, as was I, she even ate… She actually devoured the rest of our Mediterranean pimento cheese! 

Our bellies were full and we were all ready to head home and finish out this great evening with some relaxation!


We are going INSANE!!! March 2, 2011

As in Shaun T’s INSANITYworkouts! 🙂 Today is only day 3 and we both were surprised at how much more we could do in our workouts!

If you aren’t familiar with INSANITY, I’ll give you a crash course in what it’s all about… It’s said to be the hardest workout program ever put on DVD (and I believe it). It pushes you past your limits with 10 workout discs packed with plyometric drills on top of nonstop intervals of strength, power, resistance, and ab and core training moves. It’s called MAX INTERVAL training, meaning you perform long bursts of maximum-intensity exercises with short periods of rest.

This stuff is so intense I can’t even put it into words…. I can only put it into sweat, and sweat we do… I don’t know when I sweat more, during the actual “workout” or during the stretching periods (these are NOT rests). He has taken so many styles and forms of exercise such as yoga and tai chi then combined them with “traditional stretches” so even during this stretching you are working up a sweat!

During the workouts we are doing football drills, b-ball drills, “power jacks”, “power jumps”, push ups, jogging, floor sprints, and I could go on and on… The point is it is INSANE!!!!! but I LOVE it! 🙂 I know it’s working because I can feel it. I am sore, but it’s a good soreness! Like I said we made it further into our workouts without taking a break and we weren’t as winded. Our muscles were killing us at points, but if it hadn’t been for fear of my legs giving out I wouldn’t have stopped. There were times when I wanted to keep going, and had the lung capacity to do it, just not the muscle strength/endurance.

I’m not saying that after 3 days I am already “in shape”, I’m just saying that there is already a difference! I still had to stop throughout (which is encouraged, if you need it), but I can only imagine where we will be an a week, two weeks, or a month!

I am SO excited about this (as if you couldn’t already tell)!!!!! The best part for me is I am able to do it right beside my hunnie ;). Which is something we wouldn’t be doing if we were going to a gym for this (mostly because we would be too intimidated).

I can’t wait to see where this takes us!

Of course, as with all exercise, you have to watch what you eat. My favorite thing about this program is the nutrition guide, and detailed information it provides for you to perfectly balance your meals and get exactly what you need! For an example Here is what we ate tonight!

Citrus Glazed Chicken with Grilled Asparagus


  • Boneless skinless chicken breast
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • salt, pepper, paprika to taste

     (I used cajun seasoning instead of the paprika)

Put chicken in an oven safe dish, top with remaining ingredients and bake for about 20 minutes at 350*. (note: this is one serving)

For the asparagus I used TJ’s frozen grilled asparagus and drizzled with EVOO and added garlic, salt and pepper. Bake at 350* for about 20 minutes. 🙂

C. Chore you hate: Folding Laundry!!! Especially the socks!

D. Dogs: I’ve only been attached to 2 dogs in my life. The first was “Honey” A peekapoo that I got when I was 5 (given away without my knowledge when I was about 12… devastating). The second was my husbands dog “Rocky” a Lab, who ran away after we moved to Greenville… Once again devastating 😦 So we have now decided that we won’t get another dog until we have some type of fenced in area to keep it in… {I really want a Labradoodle… or Spanish water dog!}

E. Essential start to your day: Eating breakfast, usually with a big ‘ole cup-o-joe!

F. Favorite color: Pink, Yellow, Red… I can’t choose just one, it really depends on the day and my mood.

G. Gold or silver: Platinum!!! {hahah} White Gold or silver will do too. 😉

J. Job: I have the world’s most important job. I’m a Manager of Miracles (or MOM for short). I train people for life. I teach them morals and right from wrong. I make sure that they get the proper education that will help them to one day have the ability to rule the world if necessary. I also teach them the small things that go along with good civilization such as good hygiene and manners.

Here are a few of my “positions”: Nurse, Psychologist, Referee, Teacher, Attorney, Chauffeur, Maid, Cook, and Fashion Coordinator, among many others… My annual salary should be about $117,867, but I receive almost all of that payment in hugs, kisses, and love. 🙂

P. Pet peeve: People calling my daughter “Anna” (Ann-uh) when they know her name is “Ana” (Ah-nuh)… Drives me NUTS!!!
