…that pretty much sums up my night and my breakfast. ūüė¶ Ana hasn’t been feeling well, and if you have kids you know that= no sleep. Thankfully this morning she seems to be feeling a little better. {Just so you know I don’t blog if she is sick, thus no post yesterday.}

As I said my breakfast was pretty much disgusting… I tried a meal idea from my INSANITY nutrition guide and I was SO disappointed! It was power protein oatmeal (plain oatmeal with vanilla whey protein and berries). Maybe I made it wrong, but this is how it turned out…

Does that look disgusting or what!? The texture was like a mixture of grits and oatmeal… Maybe like eating polenta uncooked…? (Polenta is very good… cooked!)

So I went back to my trusty¬†(up until this point) guide, and I decided¬†on an omelet! However I didn’t have everything it called for, so I improvised! Here is was I came up with after a long hard look at my fridge.

L’arte¬†d’arrangiarsi!

The art of making something out of nothing!

This was my power breakfast, and let me tell you it brought me out of my slump!

  • 2 eggs
  • 2 egg whites
  • 1 medium tomato diced
  • 1 slice whole-wheat toast
  • 1 Tbsp all fruit preserves
  • 1 large orange

Make the eggs and egg-whites omelet style, saute veggies, top toast with preserves and VIOLA!

My sweet baby-girl (whom I playing tea party with as I type (a mom’s multitasking¬†talent), also had a wonderful¬†breakfast! Over 1/2 of her bowl of oatmeal, a whole egg and some saut√©ed tomatoes! I was more happy that she¬†ate something than anything! (She pretty much won’t eat when she feels bad.) So when she asked my for a “tookie” I happily handed one over!

Who says you can’t have dessert after breakfast!?

I do have one more thing to share with all of my “bloggies”! A new recipe!!! This is once again inspired by my nutrition guide but tailored to our liking and caloric needs for the day! You can do the same with this recipe…

Pasta Surprise

(lame name, I know, but oh well the taste makes up for it!)

  • 1 lb whole wheat penne pasta
  • 1 bag frozen bell pepper strips with onions
  • garlic (4-5 cloves minced)
  • 2 cans tuna
  • italian seasoning, S&P (to taste)
  • feta and¬† quatro¬†formaggio cheeses (low-fat)

Cook pasta al dente, in a separate pan saute garlic in olive oil until fragrant, add peppers and onions, saute 3-5 minutes until warmed, add spices and tuna and heat through. When pasta is cooked drain and toss with the vegetable mixture. Serve sprinkled with cheeses.

One good size portion (1 1/2 cups) of this is probably about 450 calories.

This was a huge success! My hubby loved it! ūüôā Which makes me very happy!

We are going INSANE!!! March 2, 2011

As in Shaun T’s INSANITYworkouts! ūüôā Today is only day 3 and we both were surprised at how much more we could do in our workouts!

If you aren’t familiar with INSANITY, I’ll give you a crash course in what it’s all about… It’s said to be the hardest workout program ever put on DVD (and I believe it).¬†It pushes you past your limits with 10 workout discs packed with plyometric drills on top of nonstop intervals of strength, power, resistance, and ab and core training moves. It’s called MAX INTERVAL training, meaning you perform long bursts of maximum-intensity exercises with short periods of rest.

This stuff is so intense I can’t even put it into words…. I can only put it into sweat, and sweat we do… I don’t know when I sweat more, during the actual “workout” or during the stretching periods (these are NOT rests). He has taken so many styles and forms of exercise such as yoga and tai chi then combined them with “traditional stretches” so even during this stretching you are working up a sweat!

During the workouts we are doing football drills, b-ball drills, “power jacks”, “power jumps”, push ups, jogging, floor sprints, and I could go on and on… The point is it is INSANE!!!!! but I LOVE it! ūüôā I know it’s working because I can feel it. I am sore, but it’s a good soreness! Like I said we made it further into our workouts without taking a break and we weren’t as winded. Our muscles were killing us at points, but if it hadn’t been¬†for fear of my legs giving out I wouldn’t have stopped. There were times when I wanted to keep going, and had the lung capacity to do it, just not the muscle strength/endurance.

I’m not saying that after 3 days I am already “in shape”, I’m just saying that there is already a difference! I still had to stop throughout (which is encouraged, if you need it), but I can only imagine where we will be an a week, two weeks, or a month!

I am SO excited about this (as if you couldn’t already tell)!!!!! The best part for me is I am able to do it right beside my hunnie ;). Which is something we wouldn’t be doing if we were going to a gym for this (mostly because we would be too intimidated).

I can’t wait to see where this takes us!

Of course, as with all exercise, you have to watch what you eat. My favorite thing about this program is the nutrition guide, and detailed information it provides for you to perfectly balance your meals and get exactly what you need! For an example Here is what we ate tonight!

Citrus Glazed Chicken with Grilled Asparagus

 

  • Boneless skinless chicken breast
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • salt, pepper, paprika to taste

     (I used cajun seasoning instead of the paprika)

Put chicken in an oven safe dish, top with remaining ingredients and bake for about 20 minutes at 350*. (note: this is one serving)

For the asparagus I used TJ’s frozen grilled asparagus and drizzled with EVOO and added garlic, salt and pepper. Bake at 350* for about 20 minutes. ūüôā

 

 

Day 2… Accountability March 1, 2011

Today I have been trying to be accountable for all of my calories. I am writing down everything¬†I eat, and breaking down the calories item by item. I really want to make sure I am hitting the right caloric range because, I know that if I am not getting enough calories, or fuel, I won’t be able to burn off the excess… gunk. {lol}

So here’s the breakdown….

Breakfast: 8:45 am

This morning was delicious!

  • 1 slice of light wheat bread (40 cal)
  • 1 Tbsp all natural PB (95 cal)
  • 1.5 tsp all fruit blackberry¬†preserves (25 cal)
  • 1 cup berries (strawberries & blueberries) (65 cal)
  • Activia light yogurt (70 cal)
  • 1/4 cup kashi¬†crunch (with flax seed) (25 cal)
  • Coffee with flavored creamer (45 cal)

                                        {I only drank half of my coffee}

Grand total: 368 calories

I was not at all happy about this… I was aiming for at least 400 calories. I know, I wasn’t that far off, but this is where the obsessing comes in…

So, I will be trying to make up for that at my next “meal” or my mid-moning snack. I am supposed to eat 5 times a day…

Mid-Morning Snack: 10:45 am

“Vanilla Berry Protein Shake”

  • 1 cup 1% milk (110 cal)
  • ¬†1 cup strawberries (46 cal)
  • 1/2 of a medium banana (50 cal)
  • 2 Tbsp¬†all-natural Peanut Butter (190 cal)
  • Ice to taste

Grand total: 396 calories

Much better! I¬†almost hit 400 calories at this “meal”!

Lunch: 1:45 pm

  • ¬†Whole Wheat English Muffin (120 cal)
  • Tuna (50 cal)
  • 1 Tbsp.vegenaaise (35 cal)
  • 1 Tbsp. dill relish (16 cal)
  • 1/4 cup cheese (50 cal)Mixed Greens Salad w/ Balsamic¬†Vinegarette (35 cal)

Grand total: 306 calories

Afternoon Snack: 5:15 pm

  • 1 slice light wheat bread (40 cal)
  • 1 Tbsp all-natural peanut butter (95 cal)
  • 1 tsp honey (21 cal)
  • Greek yogurt cup (90 cal)
  • 1/4 cup blueberries (20 cal)
  • 1/4 cup Kashi crunch cereal with flax seeds (50 cal)

Grand total: 316 calories

I know this was late for a “snack” but really they are 5 small meals. I knew we would have to eat supper late since Joseph didn’t get off until 5:00 pm, and then he had to go to the store… Such is life.

So after Joseph got home it was time for our mad crazy butt¬†kickin’ workout! And oh did it kick our hineys!!! It was great though. we were sweating and pushing ourselves SO hard! A few times I had to stop because I was light-headed and nauseous! It was intense, even more so than yesterday!

Ok, I promise I’m not usually always this ugly, but this was right after a crazy workout! I am flushed and sweaty… Ewwwwww!!!

¬†As much as I felt like puking then, I had to go cook supper… ūüėõ

Supper: 8:00 pm

(I know late, but there was nothing I could do about that today.)

 

Stir-Fry!

  • 5 oz. Salmon
  • Stir fried broccoli, mushrooms, and snow peas with homemade sauce
  • 2/3 cup cooked brown rice

Grand total: 400 calories

That brings me to today’s……. Final total!!!!!

Final total: 1,786 calories!

Yay!!! I hit my range… although my mind does go into a spiral of … whoa… that’s too much… I never eat that many calories… Oh no!… but it’s what the formula says I need, so it’s what I will do!

Welp, it’s time for me to hit the shower and the sack!

It’s only the beginning… February 28, 2011

Today was the beginning of a new workout that my husband and I are doing together. It’s a diet (counting calories and balancing meals) and exercise program. If you know me or have read any of my past blogs you know this is scary for me (counting calories). Already today I feel myself obsessing over it. Even now I am terrified that I haven’t had enough calories or that maybe tomorrow I will go over…

I am trying though… trying not to worry so much over the calories. According to this workout I should have 2,000 calories a day (it’s an extremely intense workout routine). But I am used to getting maybe 1,000 calories a day (not good, I know). So I am going to make sure that I have somewhere between 1,500-2,000 calories/day.

We also took day one pictures… That has me depressed. I’m just trying to push past it all and realize that today is only the beginning. I am praying that there will be a noticeable difference in 2 weeks when we do pics again. (We are doing them every 2 weeks to keep track.)

I know the workout will work, or kill me first! I was sweating like a… we’ll just say, sinner on Sunday, and today was only a taste of what’s to come! I am so excited and trying to stay positive. I’ve got to keep my eyes on the prize! I’m also keeping my verse, {Psalm 139:14}, on the forefront of my mind, especially when I am feeling down.

Well it’s shower time now and then I’m hitting the sack!

Shopping, Family, and Fun!

Sorry I was lazy this weekend… actually I was very busy! My hubby had a day off so we enjoyed it to the last drop!

So here is what you missed out on!

Friday Joseph took a half day! We had to go to his brother’s b-ball game that night, but on our way we made a pit stop at an outlet mall (my husbands idea!), and bought new tennis shoes! This was wildly exciting for me because I haven’t owned a good pair of tennis shoes… maybe ever! {Sorry mom, but I HATED those New Balance’s!} we both got new Nike’s! I love them!!! His and mine ūüôā We tried our hardest to get Ana a pair, but she cried and cried and SCREAMED “No. I non’t¬†yike it, shoes!” So we gave up, and decided that maybe they were uncomfortable to her.

Friday night my brother-in-law had his very last basketball game of his high-school career… Sad. ūüė¶ Even more sad was the fact that the referee’s were terrible and we lost… At least we got to spend a little time with the family! I love my in-laws! They’re the best! (I know, you’re jealous because yours are probably not so cool) lol!

Saturday was great! Ana and I woke up like normal human beings and ate breakfast, then the waiting began…………………………………… more waiting…………………………MORE waiting………………………………MORE WAITING………………………………….and FINALLY around 11:00 am Joseph emerges from his slumber. He does work very hard, usually 10 hours a day 5-6 days a week, so I guess it was ok. ūüėČ We had the best time on Saturday! We decided (or I planned) to go to the park! We started out downtown at The Falls at the Reedy Park and took the Swamp Rabbit Trail down to Cleveland Park. The weather was gorgeous! It was in the high 70’s and breezy! Heaven!!! We¬† took a picnic and had a late snacky¬†lunch of hummus, veggies, pretzels and cracker chips (Yumm-a-licious)! After it was all said and done we ended up walking at least 4 miles! Woo Hoo! We were all exhausted and I did not feel like cooking so we found a great Asian place downtown! I think I went to bed around 10:00! Way early for me!

Sunday was fabulous! An amazing service Sunday morning, then lunch with my family and some friends. ūüôā Afterwards I wanted to go visit my great-grandpa and my great-grandma… This was hard for me, it was the first time going to the cemetery since my papaw passed, but I’m glad I went, I got to talk to him a little, and of course cry a lot… but it’s all part of the grieving process, I guess. We also went and visited mamaw¬†Betty-Boop (my great-grandma). She seemed to be doing well, but I do worry about her being all alone now, mostly it makes my heart ache for her… We had a great visit and I hope to¬† be able to do it again really soon!

D. Dogs:¬†I’ve only been attached to 2 dogs in my life. The first was “Honey” A peekapoo¬†that I got when I was 5 (given¬†away without¬†my knowledge when I was about 12… devastating). The second was my husbands dog “Rocky” a Lab, who ran away after we moved to Greenville… Once again devastating¬†ūüė¶ So we have now decided that we won’t get another dog until we have some type of fenced in area to keep it in… {I really want a Labradoodle… or Spanish water dog!}

J. Job: I have the world’s most important job. I’m a Manager of Miracles (or MOM for short). I train people for life. I teach them morals and right from wrong. I make sure that they get the proper education that will help them to one day have the ability to rule the world if necessary. I also teach them the small things that go along with good civilization such as good hygiene and manners.

Here are a few of my “positions”: Nurse, Psychologist, Referee, Teacher, Attorney, Chauffeur, Maid, Cook, and Fashion Coordinator, among many others… My annual salary¬†should be about $117,867, but I receive¬†almost all of that payment in hugs, kisses, and love. ūüôā

Understanding… February 24, 2011

I am beginning to try to understand myself, to accept who I am, not as a person. I already know and like the inside me, it’s the outside that I have never gotten along with. When I look in the mirror I see every flaw, every lump or bump or bulge. I always have, even at my smallest I was never happy with my size. And no surprise that after gaining 15 lbs after getting married and 50 lbs during my pregnancy, I hate the outside more than ever… even though I am back down to my pre-pregnancy size my shape has not exactly¬†recovered (I’m prepared that it may not completely). Then again I didn’t like my shape when I was small, so…

This is where the beginning is. Trying to accept that I may not have what it takes genetically to be a “skinny girl”. I once thought this is what mattered, but with having a child this view, along with everything else, has changed. Now I am ready (emotionally) to be more accepting of myself, to take responsibility, and leadership in my own health (health being the key word). I’m sure there will always be some desire to be thinner¬†(what American girl in this messed up¬†generation doesn’t), but now it’s more about being the best me possible. Leading a healthy lifestyle to lay an example for my daughter, so that one day she will be able to look at herself in the mirror and think “I look good”, “I love me”! This honestly brings me to tears… I pray that I can set that example for her. So she will know she is beautiful, valuable and most importantly that she will know that God made her perfectly!

These aren’t just words that we teach our children they are actions that we must live out loud.

Having said all of that, and completely and totally opening myself up to you, this is my plan:

  • Eat the healthiest foods possible, and feed my

    family the healthiest food possible.

  • Exercise daily, for at least 45 minutes

            (Sundays may be an off day, not sure yet)

  • Get my family involved in our meal planning and exercising.

{I also am starting to think about monitoring my calories more closely, I’m not sure that I am hitting the right range having stopped eating meat.}

I know this is going to be tough to do because I am the type of person who becomes obsessive over things (A perfectionist?). I am the most scared¬†about monitoring calories… I have been known to bawl my eyes out if I don’t know how many are in something I want… embarrassing, but true (sadly).

So here is my official call to all of you to do the same. Maybe you’re where you want to be, maybe you just want to tone up or start exercising. Maybe like me you want to lose 15-20 lbs. No matter what your goal is you will never reach it if you don’t try! So I am encouraging you to try! You might just surprise yourself!

 

My scripture verse to keep me centered in this quest will be Psalm 139:14

I will praise You, for I am fearfully and wonderfully made; Marvelous are Your works, And that my soul knows very well. (NKJV)

There are normally¬†3 meals in a day… Having said that,¬†here are our 3 for the day!

1: Breakfast! The most important meal of the day!

Grilled Banana Sandwich!

 

 

 

 

 

This is a party in your mouth!!!

You need:

  • 2 slices whole wheat bread (I use the low cal.)
  • 2 eggs beaten
  • 1 banana (sliced)
  • a sprinkle of cinnamon and brown sugar
  • a drizzle of syrup/agave/honey (your choice)

 

What to do:

Beat eggs¬†with cinnamon and sugar in a bowl (large¬†enough to fit the bread). Lay the bread in the egg mix just like french toast, but only coating one side. Cook the bread in your pan, toasting both sides. Add the banana¬†slices cooking them until they are warm and gooey! ūüôā¬†Now build your Bananwich! Layer the toast (egg side in) banana slices, and top toast (egg in), drizzle with topper of your choice. ENJOY! (I suggest you use a fork.)

 

2: Lunch, it keeps ya goin!

Absence…

For the past few days I have been feeling a little blue, mostly missing my family and friends back home. (That sounds so strange to me.) I know, I am only and hour and a half to two hours from all of my family and friends, but that is further than I have ever been. I was born and raised with my entire family all within 30 minutes of each other!

We were the epitome of an American family. We got together for every,¬†and I mean every, holiday/birthday. We even had an annual¬†“Women’s Week”¬†vacation that all of the women in the family would go on. Of course over the years as our family grew (in leaps and bounds) things had to change some, still these changes were minor. Mainly moving family gatherings from Mamaw Betty Boop’s¬†(my great-grand mother) house,¬†to a hall. The only thing that did stop altogether was the “Women’s Week”. My great grandpa got sick so mamaw¬†Betty Boop couldn’t leave him, and we couldn’t leave her…

So, as you can see I have never been away from my family for an extended amount of time. Even If I didn’t see someone for a few weeks, or even a month. I knew I could always call them up and get together, whenever… Now, that is no longer the case. My mom has 3 kids at home still, 17, 9 and 5! So needless to¬†say between picking up from school, girl scouts, orthodontist¬†appointments… and the list goes on. She can’t exactly jump in the car and drive 2 hours whenever she wants. My aunt also has her own kids from 13-7, my grandma is raising her 2-year-old step-grand-daughter, and my great grandma doesn’t like to drive much anymore… So my family is all busy with their own lives and kids, but they all have each other close by… I guess I just feel isolated? I’m not quite sure if that’s the right word for the situation because I’m not blaming anyone. I know this is what happens in life, it’s just a¬†harder pill to swallow than I expected.

I guess the old adage, “Absence makes the heart grow fonder”, is true. Then again maybe it should read that “Absence make the heart grow heavy”… That’s how I feel right now… Thankfully I have a “Guide Book” if you will. That helps me out in my times of trouble, and a “Guide” who uses many ways to speak to me and show me that everything will be ok!

Planes… er Rocket Ships, Trains and Automobiles February 22, 2011

Hello Blog world! Sorry I didn’t get to give more detail about my day yesterday, but I have the time and energy to tell you now!

So yesterday was great! Up at 5:30 am to take the hubby to work… Yay 5:30 am! (sarcasm ¬†intended)…

Sleeping Hard!

We had a mom’s breakfast meetup to go to and I really wanted to meet more mommies! So we went, and let me say that Cracker Barrel isn’t exactly vegetarian friendly… but oh well, I had 2 eggs and 1/2 of a biscuit. Ana hardly ate (as the trend continues) ūüė¶ Breakfast was fun, it was nice to have grown up conversation with other moms!

Afterwards we went to¬†our my¬†favorite¬†place The Mall!!! I did have a very specific reason for going… Ana had been asking me for a week for a “feener” (ring) and I had saw a very cute one that I wanted to get her. Of course I couldn’t stick to the plan and ended up buying her the ring that also¬†came with a necklace, and a bracelet… rotten child!¬†

I also bought myself a new scarf!!! One I have been looking for since the beginning of fall!

Wow I look tired! Oh well, you get the picture… Leopard!!! …and it’s an eternity scarf!

 

After I decided I didn’t need to spend any more $$$ I let Ana play in the kid area. ūüôā (This is where the Rocket Ships and etc. come from, fyi). ūüėČ She loved playing, but as usual she took a while to warm up to all of the other kids. When she did, it was not what I expected!… She was BOSSY!!! Not to all of the kids, just the ones trying to slide down the slide while she tried to climb up it,¬†and to¬†the boys! She would say “NO! I wuna¬†swide”, or “Sop it!”. She has no clue how to share yet and it is now apparent that we HAVE to work on that!

During all of this fun I began chit-chatting with a couple next to me… A very odd couple. Muscle man, good looking¬†guy, and a very… earthy/hippie woman. As we talked (the mom and I) I found out our daughters were only 2 days apart! Cool right… Well the dad thought so, and when he verbalized this I almost laughed… He sounded like Mickey Mouse! (Steroids?)¬†…I had a hard time not staring before the conversation because they just didn’t match, but now… I don’t even know how I managed to notice my daughter running out of the play area toward the $4 a pop¬†train ride¬†in the mall. (Hokey I think, but whatev).

 

After all of this playtime she became¬†extra sassy and I had to put her in timeout… When I told her what was happening and why, she said “Otay” and laid on the bench… Whhaaaat!? I almost lost it, she normally throws a FIT! Later after playing more she walked up to me and said “Mommy Ina time out”… Did she just ask for time out?… Yep!… So I let her have another… Why not?! {haha} I decided this was her way of telling me she was done, so we left, and she was fine!

Today

…was almost as fun. We stayed home, but since the weather was SO nice (72*) we spent most of the afternoon outside! Somehow I managed to get a farmers tan only on my right arm… weird? I also raked my front yard, which I will never call small again! There had to be 2 years worth of leaves out there…. This did help me out with my water consumption! 2 Liters in today!
